I had pistachio cake for the first time on St. Patrick’s Day 13 years ago when a coworker made it for an impromptu celebration. Pistachio has long been my favorite ice cream flavor, but I had never heard of it flavoring a cake. The cake has become one of my favorite things to make for St. Patrick’s Day even though the only relationship is that it is green.
My coworker was hesitant to give me the recipe, so I spent some time playing with the recipe until I had one I liked.
