Cheryl Bowling made up her recipe for Steamed Zucchini-Yellow Squash Casserole. It has been a traditional dish in her family for more than twenty years.
“It’s a way to use the squash when it comes in. It’s a healthy way, too since it isn’t boiling away the nutrients.”
She suggests making sure to add the tomatoes after the other vegetables are mostly cooked.
“You don’t want the tomatoes to be total mush.”
